This year’s menu is built around contrast, technique, and emotion, bringing together new seasonal creations, Valentine’s Day exclusives, and a guest-favourite return — designed to unfold as a complete dining experience.r Valentine’s Day, including a new Burrata course and a Chicken Roulade smoked with red tea, developed to bring warmth, aroma, and depth to the middle of the menu.
By popular demand, the Wattleseed Miso Toothfish returns once again — a guest favourite refined for this special evening.
The Lamb Chop stands out as one of the highlights of the menu, paired with a distinctive house-made sauce developed exclusively for Valentine’s Day, offering a bold and unexpected balance of flavours.
The experience concludes with a Valentine’s Day–exclusive French Toast, designed as a refined and indulgent finish to the night.
Cocktail & Wine Pairing
To complement the menu, guests may opt for a curated cocktail and wine pairing, with each drink designed specifically to match its corresponding course.
As part of the pairing experience, guests will be welcomed with a Complimentary Caviar Bump Canapé, offered as a celebratory opening to the evening.
Every cocktail and wine has been thoughtfully developed to follow the rhythm of the menu from start to finish.
